LARGE: Cut 5 pounds of very clean tripe into 1 inch squares, boil in 2 gallons of water for 5 minutes. Drain & add fresh hot water, bring to a boil & add spice packet, cook for approximately 4 hours just at boiling point. Rinse & drain 1 gallon of white or yellow hominy, add to cooked tripe. Add ¼ cup of browned flour & cook an additional ½ hour. For posole, substitute chopped beef or pork for the tripe; do not drain after first boil. This best-selling spice mix will also add delicious southwestern flavor to any soup or stew.

 

SMALL: Cut 2 pounds of cleaned tripe into 1 inch squares. Add tripe to 1 gallon of water, bring to a boil and add spice packet. Cook for approximately 4 hours just at boiling point. Rinse and drain two 25 oz cans of hominy, add to cooked tripe. May subsitite chopped pork for tripe to make pasole.
