Enchilada Sauce Mix
In a one gallon pot, melt 3 ounces of shortening over medium heat. Add ½ cup of flour, brown well stirring constantly with whip (about 7 minutes) to make a rue. Remove from heat, add spice packet & stir to allow spices to toast with rue. Return to heat, add 1 8-oz can of tomato sauce & 1 quart of water. Allow sauce to thicken before adding more water for desired consistency, about one additional quart. Simmer just under boiling for 15 minutes. You may omit shortening if desired and brown flour alone.
